Denmark: Where Cocktails Meet Cuisine

In Denmark, cocktails are deeply intertwined with the culinary world. Seasonality and terroir take centre stage, with aquavit frequently used as a base spirit, often paired with herbs, botanicals, or fermented elements.

Copenhagen’s boundary-pushing restaurant Alchemist seamlessly integrates drinks into its immersive dining experience, while iconic bar Ruby stands as a pillar of the city’s refined, classic cocktail culture.

Norway: Precision and Structure

Norwegian cocktails are defined by structure and clarity. Flavours are clean, deliberate, and often built around aquavit, which appears in both traditional and more complex interpretations.

A quintessential example is the Fjellbekk—a refreshing mix of aquavit, vodka, lime, and soda. Leading venues such as Himkok and Norda exemplify Norway’s focused and high-quality approach to mixology.
