A different take on spaghetti carbonara – with a Swiss twist! The strong Emmentaler AOP Réserve gives the creamy carbonara with herbs a special depth and harmonizes perfectly with the fresh flavor. A simple but sophisticated dish for pasta lovers!

Ingredients (4 servings)
125 g Swiss Emmentaler AOP Réserve
50 g Cress
1 bunch Parsley
1 bunch Chives
1 bunch Basil
1 bunch Chervil
150 ml Cream
125 g Ham, cubed
1 Garlic clove
500 g Spaghetti
Salt, pepper
3 Eggs
  • Finely grate the Swiss Emmentaler AOP. Finely chop the cress and herbs. Place the cream, eggs, herbs and a little more than half of the Swiss Emmentaler AOP in a large mixing bowl. Press in the garlic. Finely puree everything with a hand blender. Season to taste with salt and pepper.
  • Cook the spaghetti in boiling salted water until al dente, drain and return to the saucepan. Add the ham cubes and pureed herb-cream mixture and toss everything well over low heat for 2-3 minutes until the sauce is slightly creamy.
  • Serve sprinkled with the remaining cheese.
