Ingredients (4 servings)
50 g Wholemeal flour
200 ml Buttermilk (or 2 eggs, whisked)
150 g Puffed rice
2 teaspoon(s) Garlic powder
2 teaspoon(s) Onion powder or granules
4 teaspoon(s) Paprika
2 teaspoon(s) Dried sage
8 Mini chicken breast fillets
4 Wholemeal rolls
1 Ripe avocado, peeled, pitted and sliced
0,5 Iceberg lettuce, chopped
Sea salt and freshly ground black pepper Mexican hot sauce such as Cholula (optional), to serve

Ingredients for the yogurt dressing

Ingredients (4 servings)
75 ml Greek yogurt
0,5 Garlic clove, crushed
1 teaspoon(s) Apple cider vinegar
  • Preheat the oven to 180 ˚C.
  • Place the flour, buttermilk and puffed rice in three shallow bowls.
  • Season the flour with salt and pepper.
  • Then add the garlic powder, onion powder, paprika and dried sage to the buttermilk and mix well.
  • Crush the puffed rice with your hands so that the pieces are slightly crushed but not pulverised.
  • Dip a piece of chicken in the flour so that it is completely covered. Remove and shake off the excess flour, then dip into the buttermilk.
  • Drain off the excess buttermilk, then add the chicken pieces to the puffed rice.
  • Turn over to make sure they are completely covered and then place on a baking sheet. Repeat the process with the remaining chicken pieces.
  • Now place the chicken pieces on the tray and place in the preheated oven.
  • Bake the chicken pieces for 25 - 30 minutes until golden brown and cooked through, turning halfway through cooking.
  • In the meantime, prepare the yoghurt dressing. To do this, mix the yoghurt, crushed garlic and vinegar with a little salt and pepper. Season to taste and add more vinegar if necessary.
  • Cut open the rolls and spread the avocado slices on top. Top with the shredded iceberg lettuce.
  • As soon as the chicken is cooked, place on top of the salad and drizzle with the yoghurt dressing, seasoning with a dash of hot sauce if necessary. Place the top half of the roll on top and serve immediately.
