Iced Marsala Zabaglione with peach and raspberries

The iced cream made from the fragrant sweet Marsala wine tells of endless beautiful afternoons somewhere in the south of Italy. Add to this the fruity-soft peach - dolce far niente in an indulgent way!

Ingredients (6 servings)
6 Egg yolk
6 tablespoon(s) Sugar
1/8 l Dry Marsala
1/8 l Dry white wine
4 Large peaches
1 handful Raspberries

Ingredients for the raspberry puree

50 g Sugar
1/18 l Water
100 g Raspberries (frozen)

Preparation:

  • For the raspberry puree, bring all the ingredients to the boil until the raspberries have broken down, approx. 5 minutes. Press through a fine sieve to remove the seeds and chill.
  • To make the zabaglione, place a bowl over a pan of boiling water and whisk the egg yolks with the sugar until frothy. Add the Marsala and white wine, stirring until the mixture begins to thicken - approx. 2 minutes.
  • Continue to stir vigorously until the cream has the consistency of lightly whipped cream - approx. 2 more minutes. Be careful that the yolks don't get too hot and curdle!
  • Pour a spoonful of raspberry puree into each dessert bowl or champagne glass, fill with the zabaglione and leave to cool. Then cover and chill.
  • Before serving, peel the peaches - score them crosswise, briefly pour boiling water over them and then rinse them in cold water - cut them into wedges and divide between the glasses. Garnish with some raspberry puree and fresh raspberries and serve.
