Schladming has had a new restaurant on the main square since the end of last year: the "Luther Alpenbrasserie und Bar". The dark glass façade alone is somewhat reminiscent of the "Fabios" in Vienna, and that's no coincidence. After all, restaurant owner Patrick Sit-Vrece worked there for twelve years. After that, he was the manager of Vienna's "Eden Bar". And because his wife Celine comes from Schladming, they both ended up here.
Before that, there was a "Bipa" branch here. The building, one of the oldest in Schladming dating back to the 15th century, has been completely renovated and the interior with arches and indirect lighting was designed by architect Günther Gallob and the GMP-Architektur team. A restaurant with big city flair.
And what comes out of the open-plan kitchen is also somewhat reminiscent of "Fabios" in Vienna. For example, a finely marinated tuna tartare - the whole thing cooked for 24 hours in a soya, ginger and coriander broth, topped with a chilli mayo. The creamy pea soup is livened up by the roasted flavours of crispy pancetta, the tagliatelle with salsiccia, nduja, tomatoes and rocket are handmade. However, the Venetian veal liver with mashed potatoes and a perfect marjoram and onion juice is particularly outstanding. This dish is actually prepared strictly according to the recipe that Patrick was able to observe at "Fabios". However, he assures us: "We don't want to be a 'Fabios' copy, we already have our own kitchen line."
And this is realised by a young and ambitious kitchen team working strictly according to his specifications. The friendly, well-curated wine list features many well-known names. The well-stocked bar is under the care of his wife Celine.
