Tasting Notes
Spicy new oak character on the nose, and a bouquet of early aromatic development, with lime blossom, aniseed, some peppery notes, kumquat, orange confit and limestone. Silky opening on the palate, finely woven, rich but not broad, seemingly "cool" and concentrated, with a well-integrated acidity, and a complex spiciness on the finish that comes not only from the oak. It has some minerality in the background and very good length. It is more like poultry than fish.
