With a slightly coarser mousse, the sparkling wine is restrained and clear, with fine citrus notes, white flowers, pear and fresh yeast. White almonds add a subtle touch. Very well dosed, it is fresh, animating and straightforward, with a tart, rustic flavour. No great depth, but an honest character and an excellent accompaniment to hearty dishes.
