Tasting Notes
Day one: clear yeasty notes, but also pronounced fruit. Passion fruit, vineyard peach, stewed apple. The palate combines drive with fullness, a very well-groomed phenolics in combination with a firm but also ripe acidity provides verticality and support, underneath lies a layer of fruitiness and texture. Well defined minerality, long on the finish, but not yet developed. Day two: Lots of flint, crushed rock on the nose. The fruit is no longer in the foreground. The palate is also textured with minerals, fine phenolics in combination with a lively acidity. Has the same power and length as yesterday, but is even more sophisticated. Day three: Yeast, orange confit. Smoky minerality. A fine thread of acidity, fine tactile minerality, now more elegant without losing any of its power.
