Avocado with Raclette

Jennifer and Arnaud Favre, working with top chef Pierre Crepaud, reveal how to make a simple but delicious raclette using avocado. Recipe from 'The art of raclette in 52 Delicious Recipes'.

Ingredients
2 slices raclette cheese
1 avocado
2 eggs
pinch(es) salt
pinch(es) pepper
1 handful diced bacon lardons, fried until crisp (optional), to serve
  • Preheat the oven to 220°C.
  • Halve and stone the avocado and remove some of the flesh from the inside with a spoon.
  • Place the avocado halves in a baking dish and crack an egg into each hole. Season with salt and pepper and top each avocado half with a slice of raclette.
  • Bake in the oven for 15 minutes until the cheese is melted and the eggs are cooked.
  • Sprinkle over the fried bacon lardons, if using, to serve.

Tip

For greater stability of the avocado halves during preparation, a muffin tin is recommended.
For a particularly tasty result: put a few cubes of bacon on the egg and then bake in the oven.
