Cauliflower & Broccoli Salad

A crunchy vegetable salad refined with nuts and cranberries.

Ingredients (2 servings)
salt
pepper
1/2 head of broccoli
1/2 head of cauliflower
1 red onion
30 g dried cranberries or sultanas
3 tablespoon(s) cashew nuts
150 ml yoghurt dressing (e.g. Mautner Markhof)
pear slices to garnish
  • Rinse the broccoli and cauliflower, divide both into florets and steam for 10 minutes.
  • Meanwhile, peel and dice the red onion. 
  • Put the steamed broccoli, cauliflower, onion, cranberries and cashew nuts in a large bowl (setting aside a few nuts and cranberries for garnishing).
  • Add the dressing and mix well. Season with salt and pepper if needed.
  • To serve, garnish with the remaining cashew nuts, cranberries or sultanas and pear slices.
