Gin & Tonic Sorbet

This grown-up icy treat is a must for gin fans.

Ingredients
230 ml water
200 g granulated sugar
250 ml tonic water
100 ml Gin
50 ml fresh lemon juice
  • Put the water and sugar in a pan and bring to a simmer.
  • Stir until the sugar has dissolved, then remove the pan from the heat.
  • Measure out the lemon juice, add to the water-sugar mixture, stir well and leave to cool.
  • Then add the tonic water and the gin.
  • Put the mixture in an ice cream maker and once the sorbet is firm and frozen, pour into chilled glasses and enjoy.
