The story of Kombo is rooted in a lifelong friendship and a shared passion for extraordinary flavors. Founders Chef Håvard Klempe and Jørgen Dons first met at thirteen, completely unaware they would one day open a flagship venue on the roof of Trondheim. Their journey truly took off in 2020 with the pop-up concept "Klempe og Dons." Operating under the mantra "klampen i bånn" (pedal to the metal), the duo traveled across Norway. They set up temporary kitchens and bars in everything from 100-year-old circus tents to renowned restaurants, always with the same signature: crafting food and cocktails perfectly paired with one another. With backgrounds as Head Chef at Credo and a World Champion bartender, they combine their experience to create new and unexpected flavour combinations.
In February 2025, the nomadic duo finally found a permanent home on the seventh floor of Nordre gate, Kombo Restaurant. At the very core of Kombo's kitchen beats a warm, rustic heart: a custom wood-fired oven and an open hearth. This live fire is the soul of their menu. The glowing embers bring a deeply flavorful, tactile element to the dishes, allowing them to present familiar favorites in a completely new light. At Kombo, the flavors play on the same team. The fire-kissed food and our carefully crafted cocktails elevate each other, without either taking up too much space. Everything is made with precision, curiosity, and a deep love for hospitality. Not into cocktails? No worries, Kombo has one of the best wine lists in the region, being crowned “Best New Wine List” in Norway at the 2025 Star Wine List Awards. The wine program has a deep focus on Champagne and the old world, with respect and curiosity for the New World.
