Baked Whole Quinces with Kaymak or Mascarpone

When it's damp and unkind outside, there's nothing nicer than slowly baking a few quinces in the oven, their fragrance flooding the house.

Ingredients (6 servings)
3-6 quinces
40 g butter
6 tablespoon(s) sugar (75g)
200 g kaymak or mascarpone
  • Wash the quinces and gently rub off the fluff that sometimes coats them. 
  • Place the fruit whole on a tray covered with aluminium foil and bake in a 190°C oven until they feel soft to the touch. Depending on the size and degree of ripeness, this can be the case after just one hour, but it can also take up to two hours – keep checking!
  • Allow the fruit to cool slightly, cut in half vertically, remove the core and any dark spots using a sharp, pointed knife. Place the halves with the cut side up on the baking tray, dot each quince with butter and sprinkle each with a tablespoon of sugar.
  • Now put the quinces back in the oven for a good 45 minutes until they are completely soft and their colour has changed to red. If you like, you can also activate the grill function briefly so that the sugar caramelises slightly on the surface. By now, the wonderful aroma has lured all the guests into the kitchen, so serve quickly with cool kaymak or mascarpone.
