Italian Wraps

Quickly prepared wraps are ideal for a light dinner or to take away.

Ingredients (4 servings)
500 g cherry tomatoes
2 tablespoon(s) olive oil
1/2 slices fresh (or canned) pineapple
6 tablespoon(s) basil, finely chopped
2 tablespoon(s) capers, roughly chopped
250 g ricotta, stirred to loosen
50 g whipped cream
8 small wraps
freshly ground pepper
  • Preheat the oven to 175°C. Arrange the tomatoes on the baking sheet, drizzle with oil, sprinkle with salt and pepper. Place the baking sheet in the centre of the oven and roast the tomatoes for 15 minutes.
  • Cut the pineapple into small cubes and mix in a bowl with the basil and capers. Season with salt and pepper.
  • Mix the ricotta and whipped cream together in a bowl and season with a pinch of salt.
  • Divide the ricotta mixture among the wraps. Add the pineapple marinade and then top with the roasted tomatoes.

Tip:

Try substituting the roasted tomatoes and pineapple marinade for buffalo mozzarella and parma ham.
