The Strawberry Matcha Latte with its popular combination of tangy matcha tea and fruity sweet strawberry puree is undoubtedly one of the most summery drinks around. But why limit this refreshment, which is so appealing in terms of both color and taste, to its liquid form? A variation on the classic Italian dessert, Strawberry Matcha Tiramisu is the perfect dessert for warm summer evenings. The delicious mixture of matcha-soaked ladyfingers, mascarpone cream and marinated strawberries is not only visually captivating, but also impresses with its wonderfully light balance of flavors.

For the strawberries

Ingredients
350 g Fresh strawberries
2 teaspoon(s) Sugar
1 tablespoon(s) Lemon juice
1 tablespoon(s) St. Germain liqueur (optional)

For the tiramisu

Ingredients
4 Egg yolks
100 g Sugar
175 ml Cream
250 g Mascarpone
1 teaspoon(s) Vanilla extract
1-2 tablespoon(s) Matcha (+ more for dusting)
1 packet Ladyfingers (approx. 24 pieces)
  • Prepare a mold (approx. 24 x 19 cm).
  • Wash and chop the strawberries, then marinate in a bowl with the sugar, lemon juice and a little St. Germain liqueur to taste and set aside.
  • Place the egg yolks and half the sugar (50g) in a bowl over a bain-marie and stir well for a few minutes. Make sure the water in the bain-marie is only simmering and not boiling. The bowl with the eggs and sugar should not touch the water.
  • Remove the bowl from the heat and beat with a whisk or egg beater until the mixture turns a pale yellow color.
  • In another bowl, beat the cream and the remaining sugar (50g) until stiff. Then add the mascarpone and vanilla extract and beat again until stiff.
  • Now fold the egg mixture into the mascarpone mixture.
  • Prepare the matcha: Sieve the matcha powder into a small bowl and add 125 ml of water heated to 80 degrees. Stir until the powder has completely dissolved and then pour into a shallow bowl.
  • Dust the base of the tiramisu dish with matcha powder. Dip the ladyfingers in the matcha. Alternate layers of ladyfingers, mascarpone cream and strawberries. Finally, dust the top layer with matcha powder.
  • Chill for at least 4 hours, preferably overnight.
