Founded in 1750, the Gimonnet family's history in Champagne winemaking dates back to the pioneering days of sparkling wines. As it is known today, however, the winery did not get its name until 1935, when Pierre Gimonnet began his work in Cuis. Today, the winery is almost a pure Chardonnay producer and specialist. Most of the parcels, many of them in Grand Cru sites in Cramant, Chouilly, Cuis and Oger, are planted exclusively to this variety. On average, the vines have an age of 35 years, but the family also has two very old parcels, planted in 1911 and 1913.
In favour of depth and balance, Gimonnet avoids a cuvée made exclusively with grapes from Grand Cru sites. Although the parcels are vinified separately, the reserve wines are also aged as an assemblage, and unlike many other houses, they are aged in bottles on their lees, as they are convinced in the house of Gimonnet that they develop much better that way.
In principle, Gimonnet only uses grapes from its own vineyards, which is also a special feature. The family's champagnes are considered to be full of finesse, very elegant and decidedly capable of development.
On the other hand, they also embody the terroir of the Côte des Blancs excellently. Pierre Gimmonet produces no less than 250,000 bottles a year, but they sell like hot cakes among connoisseurs and aficionados.
