Preserving the character of the varieties is no easy task for sparkling wines. If the grapes for the base wines are usually harvested early and the sparkling wine is left on its lees for a long time, the style plays a greater role than the variety. Flik Sektmanufaktur prefers an extended maceration period, does not use enzymes during clarification and allows the must to settle naturally in order to bring out the varietal character in the sparkling wine. And this can even be seen in the 2014 Auxerrois brut.
