In the far west of the Primorska coastal region, in Neblo near the Italian border, lies the Zanut winery, which, with just 7 hectares of vineyards, meets all the requirements of a boutique winery. Needless to say, it is a family-run winery of this size. The parcels are situated at 75 to 260 meters above sea level and enjoy the delightful interplay between warm Mediterranean influences and cold air currents from the Alps. This provides the grapes with the best conditions to reach full and therefore perfect ripeness. After the winery made great efforts to better understand the conditions in the vineyard for the production of high-quality wines, the parcels are now cultivated in a certified sustainable manner. Yields are deliberately kept very low. The harvest takes a long time, with the last grapes only being picked at the end of October. The grape varieties cultivated are Pinot Blanc, Pinot Gris, Sauvignonasse, Merlot and Cabernet Sauvignon. The underground, ultra-modern cellar offers the best conditions for the production of high-quality wines. The cellar is divided into two zones, one with a sophisticated cooling system for the production of fresh wines that can be drunk young, while the second part is used for maturing very high-quality wines, for example in barriques. The team is aware that it is not technology that produces quality and so they work with as little intervention as possible. The use of chemicals is deliberately avoided. The total production of around 50,000 bottles, depending on the vintage, is divided into two lines. One includes wines that are intended for quick consumption, e.g. from grape varieties such as Pinot Blanc, Pinot Gris or Merlot, while the other line includes very high-quality and long-lasting wines from the Sauvignon Blanc, Rebula or Cabernet Sauvignon varieties with maturity and ageing potential.
