Delicately savoury on the nose, with some citrusy, slightly balsamic and "stony" notes and a hint of wood and yeast. On the palate, the wine is juicy and taut, the mousse is very fine and dense, and accompanied by a salty, civilised acidity that enhances its freshness. Puristic and piquant.
