Delicately savoury on the nose, citrusy, slightly balsamic and "stony", a hint of wood and yeast. Juicy and taut on the palate, the mousse is very fine and yet dense, accompanied by salt and enhanced by a civilised acidity in its freshness. Puristic, piquant.
