Tasting Notes
Sparkling ruby with a slight garnet sheen. Multi-layered nose, initially showing notes of spices, especially thyme, bay leaf and white pepper, then some blackberry and cassis. Spicy and full of character on the palate, salty on the mid-palate, opens up with pithy tannins, rustic, still needs time to mature.
