A savoury, ripe patina from the wooden barrel ageing: cherry and malt with undertones of nougat and herbs. The palate begins round and supple, then tannins emerge that are still fresh and firm, giving the wine tension (and further ageing potential). A fine thread of acidity runs through the wine and supports the juiciness of the finish. With grilled lamb chops.
