Medium brilliant greenish-yellow in colour. Initially fresh stone fruit on the nose, with woodruff and lemon balm notes too, then a delicate yeasty savouriness and buttered toast emerges too. The palate brings a taut acid nerve, fine mineral texture and an elegant honeyed sweetness to go with the grippy mousse. Medium length, with a salty, nutty finish.
