Etyek’s best-known winery age their Champagne-styled cuvée for two years on the lees (unoaked, but with full malolactic fermentation), giving a pure, elemental wine with good depth of flavour, coming close to a Blanc de Blancs in style. You'd wish for more boldness and complexity, so let’s wait for a Reserve version.
