Tasting Notes
Very intense aroma: chocolate cake and red fruit jelly, wild cherry, with air contact finally also thyme and cinchona bark. The spontaneous fermentation is noticeable. Juicy and taut on the palate, with a healthy acid backbone and fresh, firm tannins. Compact, pithy finish. Already drinkable, but should be even more complex in two to five years.
