The nose is already comparatively ripe, with aromas of lavender, stewed apple and blossom honey, and yeasty spontaneous fermentation notes are still there as well. The palate opens with a pithy acidity, then enfolds texture and fullness that contrast powerfully with the acidity and likewise with the quite powerful tactile-minerality.
