Peppery on the nose, along with yellow fruit, quinces, pears and apples. A savoury spice of fennel, sage, mustard seeds also emerges, mixed with ground rock. Full of tension on the palate, with the creamy core balanced by lively acidity and a distinct spiciness of fine phenolics. Good extract and nice length.
