Tasting from 16.08.2023: Ulrich Sautter

Fresh and slightly green aromatics on the nose, with kiwi, bell pepper, freshly cut grass and currant and some herbal, savoury, and yeasty notes from the spontaneous fermentation. The palate is tight and compact with a grippy texture, pronounced acidity and fine spiciness, again, with flavours along the green spectrum: kiwi, gooseberry, green bell pepper, and a spicy finish.
