Restaurant “Doubek”: Vienna’s Two-Michelin-Star Cuisine Comes to Copenhagen

Vienna’s two-Michelin-star restaurant Doubek is serving as a guest at the Japanese Pagoda in Tivoli Copenhagen until 11 July. For the occasion, the entire team travelled from Vienna – bringing along its fire-based kitchen, signature dishes, and Austrian wines.

With a four-week residency at Tivoli in Copenhagen, Vienna’s two-Michelin-star restaurant Doubek is leaving Austria for the first time. Until 11 July, the team led by Stefan Doubek and Nora Pein is taking over the kitchen of the Japanese Pagoda. Since 2021, Tivoli Gardens has invited leading international restaurants for limited-time residencies. In 2026, the programme features seven Michelin-starred restaurants with a combined total of 15 stars. For Doubek, the invitation marks its first international appearance outside its own restaurant in Vienna.

Bringing Everything Along

For the four-week residency, the entire team travelled from Vienna to Copenhagen. The logistical effort was considerable, as not only the staff but also specially produced components such as sauces, tableware, uniforms, and decorations were transported in order to recreate the restaurant’s way of working as authentically as possible.

A particular challenge was the fire-based kitchen that defines the restaurant in Vienna. The specially developed cooking station cannot be replicated one-to-one in Copenhagen. Nevertheless, fire remains a central element of the cuisine. Among other things, the team is working with specially transported charcoal to preserve the restaurant’s distinctive flavours and cooking techniques.

Bringing Vienna’s DNA to Copenhagen

The menu combines well-known dishes from Vienna with new creations developed specifically for the local conditions. Familiar dishes include Carabinero and Choux, complemented by new seasonal compositions such as halibut with asparagus, based on Danish produce and the possibilities offered by the kitchen in Copenhagen.

Austria in the Glass

The wine pairing was also curated especially for the residency. Around 500 bottles of Austrian wine were shipped to Denmark. For the participating winemakers, the residency provides an opportunity to showcase their wines as part of an internationally recognised fine dining programme.
