Amaretti show remarkable regional diversity across Italy, yet their essence remains the same: premium almonds, a careful attention to texture, and an irresistible aroma. With properly whipped egg whites and a correctly balanced almond mixture, amaretti are perfect as a stand-alone treat or alongside espresso. This recipe yields approximately 20 pieces.

Ingredients
200 g Ground almonds
150 g Sugar
1.5 tablespoon(s) Flour
1 tablespoon(s) Chocolate powder
0.5 bottle Bitter almond flavor
1.5 Proteins
1 pinch Salt
  • Preheat the oven to 130°C fan (fan)/150°C top/bottom heat).
  • In a bowl, mix the almonds, sugar, flour, and cocoa powder. Add the bitter almond extract and mix thoroughly.
  • In a separate bowl, beat the egg whites with a pinch of salt until stiff peaks form, then gently fold them into the almond mixture until just combined..
  • Shape the dough into walnut-sized balls and roll them in powdered sugar. Arrange them on two prepared baking trays lined with parchment paper. Press each ball lightly with a glass to flatten slightly.
  • Bake the amaretti on the middle rack for about 20 minutes, until the outside is lightly crisp while the center remains soft and slightly moist.
