The world’s most famous avocado dip

Ingredients

Ingredients (4 servings)
1 garlic glove
2 fresh serrano chillies
1 pinch(es) of coarse sea salt
1 small onion
2 tablespoon(s) lime or lemon juice
2 large avocados
4 twigs of koriander
1 pinch(es) of freshly ground black pepper

PREPARATION

  • Peel the garlic and cut it in half. Wash and trim the chillies, remove the seeds if desired, and finely chop. Using a mortar and pestle, crush both together with a pinch of sea salt into a paste, then transfer to a bowl.
  • Peel and finely dice the onion. Add it to the chilli paste along with the lime juice and mix well.
  • Halve the avocados, remove the stones, scoop out the flesh and mash it with a fork. Fold it into the mixture.
  • Finely chop the coriander and add it. Season to taste with sea salt and freshly ground black pepper.
