Hanover has beautiful corners - and Wedekindplatz is undoubtedly one of them. Although a busy road cuts through the ensemble, the charm of the old building facades, cobblestones and old trees remains unbroken. Wine stores and restaurants have settled in the area - including the "Marie". The new Michelin-starred restaurant is located on the first floor of a Wilhelminian-style building and impresses with casual chic made from natural materials. Sven Holthaus has been working here for several years on an open, modern fine dining kitchen. An award in the Michelin Guide was his silent wish, although he has never cooked in a Michelin-starred restaurant himself. Stylistically, the native of Emsland tends to move in safe harbors rather than on daring paths of indulgence. His dishes are contemporary, creative and well thought-out - complex, but never complicated. One example: pieces of grilled wagyu shoulder bathed in a palatable, Asian-inspired beef broth, supplemented with lovage oil, pickled shallots and parsnip straw and puree. A waxy egg yolk is served in onion confit and horseradish beurre-blanc - an elegant combination of depth and freshness. Well-selected wines are served in the glass. For example, a 2020 Sauvignon Blanc Ried Czamillonberg from the Polz winery, whose lively acidity balances the saltiness of a pickled fjord trout with red peppers and potato and wild garlic cream. Or a 2022 Chardonnay Réserve from the Thörle winery with black-feathered chicken, accompanied by buttered turnip and goulash jus. The great thing is that the success story of "Marie" has only just begun.
