Bright golden yellow, very fine, persistent mousse. A hint of biscuit, candied orange zest, ripe white pear fruit, a touch of yellow tropical fruit, fine floral honey undertone. Medium complexity, white apple, fine chalky minerality, good freshness, pleasantly dry finish, light-footed style, discreet fruit expression with a lemony finish. A multi-faceted food wine.
More about the tastingStraw colour with a minimal copper reflex. Fruit-driven: small red berries, blueberry, tangerine, yeast, macadamia nut. Powerful structure on the palate, salty, fine mousse that is not too powerful (the carbonic acid drive was produced towards 4.5 atmospheres instead of 6 atmospheres like most other Champagnes). Built straight, gaining smoothness on the palate, good length, nervously carried finish with mineral accompaniment, overall more fruity than savoury.
