Tasting Notes
Straw colour with a minimal copper reflex. Fruit-driven: small red berries, blueberry, tangerine, yeast, macadamia nut. Powerful structure on the palate, salty, fine mousse that is not too powerful (the carbonic acid drive was produced towards 4.5 atmospheres instead of 6 atmospheres like most other Champagnes). Built straight, gaining smoothness on the palate, good length, nervously carried finish with mineral accompaniment, overall more fruity than savoury.
