Der Carato wird aus den besten ausgewählten Merlot-Trauben von über 40 Jahre alten Rebstöcken hergestellt. Die Trauben werden in den Weinbergen der Locarneser Hügel angebaut, wo sie tagsüber von der besten Sonneneinstrahlung und nachts von einer kühlen Brise profitieren und somit die besten Voraussetzungen für eine perfekte Reifung haben. Der Carato ruht für etwa zwei Jahre in Barriques aus französischer Eiche, die auf Italienisch "Carati" genannt werden. Ein Wein von grosser Struktur, der das Terroir, das ihn hervorgebracht hat, voll widerspiegelt, mit einem intensiven und würzigen Charakter von grosser aromatischer Finesse und Eleganz. Er hat eine rubinrote Farbe mit violetten Reflexen und ein intensives, weiniges Bouquet, Vanille, leicht würzig mit Noten von Pflaumen und Brombeeren. Sein Geschmack ist voll, anhaltend und reichhaltig. Hervorragend geeignet für die Zubereitung von Rinderfilet nach Bordeaux-Art mit Carato-Merlot.

On the nose notes of dried plum, blackberry and cherry. In addition, some blueberry, hints of liquorice and herbal-spicy nuances. Fresh on the palate, with nice acidity and elegant red and dark berry fruit. Subtle tannin and long finish with cocoa impact.
