The yeast still sets the tone, fresh bread dough, green apple and also ripe peach, fine savouriness, and Sichuan pepper. Fresh and animating on the palate, with crisp acidity, grapey notes, pear, green gooseberry, rhubarb and green apple. Fine mousse – very purist.
