Notes of spontaneous fermentation, herbal, apple peel, pear, malt, chalky mineral, miso, meadow herbs. Tight construction on the palate with distinctive tart notes, apple, ripe and present acidity, grippy phenolics, juicy, also textured with chalky minerality.
