Baked Camembert with Figs, Macadamia Brittle and Honey

If you want to do bees – and your taste buds – a favour, buy honey from an organic beekeeper. Pour the liquid gold over delicious camembert and figs and enjoy.

Ingredients (4 servings)
50 g macadamia nuts
2 tablespoon(s) brown sugar
8 figs
2 Camembert, 200-250 g
12 slices of baguette
3 teaspoon(s) honey
olive oil, for brushing
fresh mint, to garnish

Preparation:

  • Preheat a fan-assisted oven to 180 °C. 
  • Roughly chop the macadamia nuts and toast them in a dry pan until fragrant. Add the brown sugar to the pan and let it caramelise, tossing with the nuts. Leave to cool on baking paper (break apart if necessary).
  • Wash the figs. Stack the two Camemberts in the middle of a baking dish and spread the figs around. Brush the bread slices with olive oil. Bake the cheese, figs and bread slices in the oven for about 25 minutes until the cheese is melting inside. Remove the bread from the oven as soon as it is nicely browned and crispy.
  • Transfer the cheese to a plate, spread the figs all around (carefully cut in them half first if you like). Sprinkle the macadamia nuts on top and drizzle everything with the honey. Garnish with mint and serve with the baguette slices.
