Pasta: Spaghetti il Padrino from 'The Godfather'

'The Godfather' trilogy made the city of Corleone famous. Here is the recipe from the film.

For the sauce:

Ingredients (4 servings)
1 garlic clove
1/2 onion
1 tablespoon(s) olive oil
2 Salsicce (Italian sausage), skinned and cut into small pieces
125 ml red wine
400 g chopped tomatoes (from a can)
salt
pepper
1 teaspoon(s) sugar

For the meatballs (polpette):

Ingredients (4 servings)
200 g mixed minced meat
1 egg
parsley
parmesan cheese, grated
1 handful breadcrumbs
salt
pepper
500 g spaghetti

For the meatballs:

  • Mix minced meat, beaten egg and parsley.
  • Add salt and pepper and then the parmesan cheese and breadcrumbs, a little at a time, until you get a mixture that is not too sticky.
  • Shape the mixture into small balls.

For the sauce:

  • Sauté the garlic and onion until light brown.
  • Add the sausage pieces and sauté for a few minutes.
  • Deglaze with red wine and cook until the alcohol has evaporated.
  • Add the chopped tomatoes and season with salt, pepper and sugar.
  • Put the polpette in the sauce and cook over a medium heat.
  • Cook the spaghetti until al dente. Drain.
  • Mix with the sauce, serve and sprinkle with parmesan cheese.
