The red wine variety Stavroto is an indigenous grape variety in the Rapsani region in northeast Thessaly around the highest mountain in Greece, the "Götterberg" Olympus. Origin and origin are unknown. After budding very early, which exposes it to the risk of spring frosts, it matures late after a long growing season. The grapes with their narrow berries are medium in size and even larger. In the Rapsani origin, Stavroto is one of the three permitted grape varieties and is blended with the Krassato and Xinomavro varieties. Small deposits have also been discovered in Kozani and Magnisia. The grape variety is not found outside of Greece.
