Winter Rebujito
Rebujito is the summery drink downed at ferias all over Spain. Normally made with very dry fino or manzanilla, here a nutty amontillado gives the drink more seasonal grunt.

75 | ml | amontillado sherry |
100 | ml | lemonade |
50 | ml | soda water |
2 | pinch(es) | orange bitters |
- Put a few ice cubes in a glass, add the ingredients above, stir and enjoy.
- Serving note: You can make this drink individually, or mix it up in a jug as soon as your guests arrive and serve in wine glasses with a slice of orange to garnish and roast almonds alongside.
