Ice cream sandwiches with instant strawberry ice cream

It's high time to ring in the ice cream season - and what better way to do so than with spring's sweetest fruit?

For the chocolate chip cookies

Ingredients (4 servings)
150 g Butter, soft
120 g Sugar, brown
70 g Granulated sugar
1 Egg, room temperature
1 packet Vanilla sugar
200 g Plain flour
25 g Cocoa powder
1 teaspoon(s) Baking powder
1 pinch Salt
150 g Chocolate, chopped (60 %)

For the instant strawberry ice cream

Ingredients (4 servings)
400 g Strawberries, frozen
80 g Powdered sugar
150 g Whipped cream, iced
1 tablespoon(s) Lemon juice
1 glass Strawberry powder, freeze-dried (optional)
  • To make the chocolate chip cookies, cream the butter with the brown and granulated sugar in a bowl. Add the egg and vanilla sugar and mix well.
  • Mix the flour, baking powder and salt in a separate bowl. Gradually add the dry ingredients to the butter and sugar mixture and mix to a smooth batter.
  • Fold in the chopped chocolate.
  • Cover the dough and chill for 30 minutes.
  • Shape the dough into walnut-sized balls and place on a baking tray lined with baking paper. Flatten the balls slightly, leaving enough space between them, as the cookies will spread during baking.
  • Bake in a preheated oven at 180 °C top/bottom heat for approx. 10 to 12 minutes until the edges are golden brown. Allow to cool completely.
  • Meanwhile, for the instant ice cream, place the frozen strawberries in a blender with the powdered sugar, cream and lemon juice and blend on the highest setting until you have a creamy, smooth ice cream mixture. If the ice cream is too firm, add a little more whipped cream.
  • Place in the freezer for approx. 30 minutes if you want it to firm up.
  • For the ice cream sandwiches, place a generous spoonful of the ice cream on the flat side of a cookie.
  • Place a second cookie on top and press down lightly so that the ice cream is visible around the edge. Roll in the strawberry powder.
  • Serve the finished sandwiches immediately or place in the freezer for approx. 1 hour to firm up.
