Vanilla tartlets “Pastéis de Nata”

In her book “LouMalou – Entspannt backen”, Nadja Zimmermann reveals how the sweet tarts from Portugal are easy to make.

Ingredients (10 servings)
400 ml milk
30 g cornstarch
1 teaspoon(s) vanilla paste
90 g sugar
4 egg yolks
1 untreated lemon, grated zest
1 puff pastry, rectangular
a little powdered sugar
  • Bring the whole milk to the boil with the cornflour, vanilla paste and sugar, stirring constantly. Stir in the egg yolks and lemon zest. Simmer for 2-3 minutes and then leave to cool well so that the pudding sets.
  • Lay out the puff pastry and cut out about ten circles. Place the puff pastry circles in a muffin or roll tin that is not too high and fill generously with the custard.
  • Bake the tartlets in the oven at 220 degrees for around 15 minutes until golden brown. Dust with powdered sugar. Leave to cool on a wire rack.

  • muffin or bread roll tin
  • cooling rack
