Self Description
Boreal is a contemporary 40-seat restaurant in Helsinki’s Design District, inspired by the landscapes and natural rhythms of the Nordic north. Forests, lakes, cold seas and long seasons shape both the philosophy and the menu. The kitchen works closely with wild foraging, organic agriculture and responsibly sourced seafood and meat, treating ingredients with precision and respect.
Chef and co-founder Pasha Demin, whose career includes time at Noma in Copenhagen and Azurmendi in the Basque Country, leads the culinary vision. Boreal presents a seasonal tasting menu of around ten courses that unfolds in contrasting “waves” of freshness, acidity, texture and temperature.
Fermentation plays a key role in the kitchen, allowing the team to preserve Nordic ingredients and deepen flavour. Carefully crafted beverage pairings, including house-made juices, kombuchas and botanical infusions, complete the experience.
