The Lavrencics family can trace their history in the famous Vipava Valley back centuries to the year 1499, when they finally began producing wine in this privileged location. But even then, local grape varieties played a very special role for many winegrowers. But that alone was not enough for Primoz Lavrencics; he wanted to put his own ideas about wine in the region into practice and so in 2009 he founded his own small winery, or more precisely a boutique winery, which he christened "Burja", named after a wind that significantly determines the meso- and microclimate in the Vipava Valley. The winemaking tradition of the small valley, the autochthonous grape varieties of the region and manual labor play a very important role for him. Above all, however, is the production of authentic wines in harmony with nature. He produces his wines in a biodynamic way, trying to understand the terroir and microclimate of each individualistic plot as precisely as possible. He cultivates the indigenous grape varieties Malvasia, Zelen. Rebula and Welschriesling for white wine, and Refosco, Pinot Noir and Pokalca, also known as Schiopettino on the Italian side, for red wine. Most of the wines are vinified in contact with the skins, as advocated by the proponents of natural and orange wines. Primoz Lavrencin makes sure to intervene as little as possible in the winemaking process. "I control a little and allow a lot," is his credo. The wines from the "Burja" winery are considered exemplary and style-defining in the field of biodynamic viticulture as well as in the natural and orange wine sector.
