Tasting Notes
90% Viura and 10% Malvasia, aged for ten years in wooden barrels and racked twice a year. Before bottling (which is done by hand) it's fined with chicken egg whites - like a red wine. Light golden in colour. The bouquet is on the one hand tertiary: old wood, iodine, but at the same time there's remnants of primary fruit: lime blossom, verbena and grapefruit peel in particular. The palate is round and full-bodied, soft to almost oily, with only a mild acidity. As it transitions to the finish there is an astringency that still seems downright youthful, and the acidity tightens up. Finishes dry, extract-driven and very mineral. A fascinating freshness despite the maturity: timeless rather than old-fashioned, and not at all stale.
