Tasting Notes
Notes of ripe Amalfi lemon zest, subtle and buttery hints of raw shortcrust pastry and an edge of freshly cut yellow apple make for a rich, lemon-scented nose. More air brings an overtone of almond and marzipan. The palate unites a wonderful blanc de blancs briskness with gorgeous subtlety and a superfine mousse. This is slender and elegant with a wonderful balance of fresh, bright, ripe lemon, creamy and buttery nuances and chalky, cooling depth. The extended finish comes with much depth of flavour, echoes of umami, more lemon and is utterly refreshing.
