Tasting from 23.03.2022: Ulrich Sautter

Some spontaneous fermentation nose on the nose - raisins, fresh stewed apples and cloves to the fore. The palate is dense and full-bodied but with a firm acid backbone and clear minerality. The concentrated palate fruit shows the warmth of southern Burgundy, but without going too far. Fine savoury notes can be now detected on the finish, but this is only just beginning to unfold.
