Silver-coloured, shimmering golden yellow. Notes of fresh yeast dough, lemon confit and green hints of watercress, Granny Smith apple, some star fruit and shortcrust pastry at the start. Crisp and straightforward on the palate, with a fine mousse and acidity full of character, reminiscent of young rhubarb. Very refreshing and animating on the finish with good length.
