Aged four and half years on the lees, the toasted, nutty, slightly earthy complexity is reminiscent of a classy Cava Gran Reserva. However, the fruit register is more towards green apple and quince, with punchy acidity giving this a cool-climate energy. Bone-dry, textured and very long on the palate, this is an eminently serious sparkling wine, showing the potential and ambition of Etyeki Pezsgő by one of its largest producers.
